Fish Tacos + Red Cabbage Mango Slaw

Today we have our food contributor extraordinaire Amanda Franklin showing us how to make fish tacos with a red cabbage mango slaw. I tried one of these tacos and loved it so much I ended up making them again the following week. This recipe is great if you need a quick, healthy, and easy weekday recipe. But it's also a great choice if you are entertaining in the summer months.

 

FISH TACOS w/ RED CABBAGE MANGO SLAW
serves 4

Marinade Ingredients
3 limes, juiced
1/2 tsp. salt
1 jalapeño, seeded and sliced
1 small red onion, cut into thin half moons
1/2 c. cilantro
1 1/2 lbs halibut filet

Slaw Ingredients
1/2 small red cabbage, shredded
1 large mango, cut into small cubes
1 jalapeño, seeded and chopped
1/2 c. cilantro
2 tbsp. cider vinegar
2 tbsp. EVOO
salt to taste

corn or flour tortillas (you can warm these guys in the microwave for a minute or so)
avocado slices
extra lime slices

1. Preheat broiler. Mix all marinade ingredients. Cover halibut filets with marinade for 20 minutes.
2. While the fish is marinating, prepare the slaw by thoroughly mixing together all ingredients.
3. On a foil lined baking sheet, place fish and marinade. Depending on thickness, broil for about 6-7 minutes on each side, or until cooked through.
4. Stuff tortillas with a few ounces of fish, slaw and an avocado slice.
